I make mine sort of like this, except I start by lightly browning about a 1/2 pound of fresh ground pork (for this size recipe, which is rather small) .
Remove and drain the meat before browning the onions, then add it back in the pot before the simmer. You don’t need to fully cook the pork, as it simmers in the sauce later, but browning it helps get some of the grease out. Also, if I’m going to the trouble, I’ll cook a much bigger pot (4x) and freeze some for next week.

In our cookbook “A Tale of Two Chiles”, we have a variation on the basic sauce called “Green Chile Stew”. Cut up some lean pork into 1/2″ or so cubes, dredge in flour and brown in a little oil. Add it to the sauce and simmer a half-hour or so until the pork is tender. You can also, if desired, add a cubed potato at the same time as the pork. Makes a nice hearty stew that gives you your “green chile fix” along with some meat and potatoes. Enjoy!

Im originally from the northwest and just moved to the southwest, and have become a fan of this type of sauce; if i wanted to add pork , when do i do this? Ive noticed many restaurants have peices of pork in this sauce.
