Here is an unbelievably good recipe for those missing cookies or a snack food. This is not Induction friendly due to the molasses, coconut, and the Ultimate Splendid Baking Mix, but that is just one more reason to perhaps move on to Ongoing Weight Loss phase. This recipe is a take-off of a chocolate chip recipe from Jennifer Eloff (low-carb-news.blogspot.com but as I said in the past, I am not much of chocolate eater. I exchanged the sugar free chocolate chips for pecans, and I honestly think these are better than the originals. Here is the recipe for the Low Carb Spendid Baking Mix (another Jennifer Eloff creation): 1 2/3 cups ground almonds 2/3 cup vanilla whey protein 2/3 cup vital wheat gluten Low Carb Chewy Pecan Cookies Ingredients: 1 1/4 cup of Splendid Low Carb Baking Mix 1/2 tsp baking soda 1/8 tsp salt 1/2 cup butter 1 cup Splenda, Granulated 1 egg 1 tsp vanilla extract 1 tsp molasses 1 1/4 cups unsweetened coconut flakes 1/2 cup Pecans, chopped Preheat over to 350 degrees. In medium bowl, combine Splendid Bake Mix, baking soda and salt. In food processor, combine butter, Splenda Granular, egg, vanilla extract and molasses; process until well combined. Add dry ingredients and process until combined. Add coconut and pecans; process a final time. Place roughly tablespoon on a parchment-lined cookie sheet and bake in 350°F 10 to 12 minutes. Cool on rack. Nutrition Info (22 servings) 85 Calories, 7.5g Fat, 3.6g Carbs (1.6g Fiber), 4g Protein

Most of my recipes should be convertible to use whatever sweetener you choose. There are a few that don’t work in some regards like Truvia and chocolate that I have discovered. Outside of that, I use Splenda because that’s what I have on hand, but you could certainly use Stevia in the Raw instead for most of them.
Could you do more recipes without Splenda or alternatives ( such as Truvia ,Stevia, etc). Splenda and I don’t work well together.
nice thing……………
The soda is my wife’s and kids. I don’t drink Diet Dew ever any more.
Congrats on your weight loss — that is a great first week!
Ok who is drinking all of the soda in your house! lol
thanks so kindly!
thanks so very very much
for making such an effort in making these videos they truly are a godsend for someone who is your old weight and has been following you thru the first two weeks of induction with a 10 lb loss already

Can I just say THANKS so much for making such a huge huge effort in providing these videos – I started following them about 2 weeks ago in my induction, and am very close to your beginning weight – you truly are an inspiration – and certainly an inspiration to get me cooking again! Thanks so very kindly and i look forward to watching more!
Yeah, that would be my kids — you just can’t always raise good cameraperson. The good news is I have changed cameras now which places the microphone on the front of the camera, which should help with this problem too.
Nice recipe! Who’s breathing that heavily behind the camera?
I don’t think it would be nearly as tasty without the coconut in the cookies. The coconut helps hold the cookies together without becoming too brittle.
i dont really like cocunuts, would this recipy work without them?

Sorry even the faux pecan pie I just made last week was as involved as this recipe. This recipe really is not that difficult to make, and I’d encourage you to try it out. (You can freeze the cookies and keep them for awhile.) You might also check out my creme brulee video. It has an awesome nut topping that you could eat plain.
Congrats on your progress! That is a great start.
I love your videos. Do you have anything like this sweet pecan receipe that is more simpler to prepare? I am always googling Atkins ideas. So far I’ve lost about 25 bls. on it. Thanks alot…God bless….
Yeah no doubt! Its amazing the difference on prices between each product and also I noticed that we paid more because its a worldwide brand, but the product is the same and I do it too even the quality are sometimes better on this small brands.
Can I help it if I am cost conscious shopper? LOL
I like the accidental commercials to Great Value!!
Thanks for the vote of confidence, and I am glad you like the videos. Hopefully I should have another recipe one up soon (this week).
