@infosponge30 His recommended cooking time is accurate, 3 1/2 to 4 hours, so you dont want the fire too hot. 225-250 is good, and it helps if you have a grill with a temp gauge or a separate meat thermometer. I judge my fire more by the smoke being produced than the temp. About every hour, I throw on some more hickory chunks(prefer them to chips for longer burning and more smoke) and maybe a few fresh pieces of charcoal. As long as it’s smoking good without flame, you’re fine.
