WOW!!! It’s simply Beautiful what she did with the fondant!!!… Lately I’ve been thinking of making cakes with fondant coz it always looks so much more yummy… and I’ve never actually ever worked with fondant and didnt know how to go about it… but now I do! What were you brushing on the fondant decorations to make them adhere to the cake. Also, if you were to make a cake with a filling that needs to be refrigerated, how do you store the fondant covered cake. Doesn’t the condensation ruin the fondant? Thank you.

@helenmumfy Robin puts 2 layers of buttercream onto the cake before laying the fondant on top. The first layer is lightly applied (to to keep the cake crumbs from getting in the way) and then chilled in the fridge until firm. Then she applies the top buttercream layer – and makes sure it is smooth and straight on the sides – and then puts it in the fridge to harden (15-20 minutes, maybe more). Hopefully these steps will help!

hey, I always seem to have a problem with dents and bumps in my cakes after putting the fondant on. Its usually worse around center where the butter icing and jam is, i do put butter icing on the cake before putting the fondant on, but perhaps not enough? however i don’t usually put cream in the icing, could that be a reason? I notice the butter icing with you is quite thick,your butter icing seems quite hard,when you mention you chill it for 15 – 20 min, is it frozen or refrigerated? thank you.

I like fresh flowers, but be sure to get those that have not been sprayed. Probably not a ton of transference if they have, but still, not a good idea to use sprayed flowers..

@utopiad4 My aunt (by marriage) is a pastry chef and swears that the traditional topping for a red velvet cake is butter cream. I’ve also heard others argue the same thing. I, however, prefer cream cheese frosting – it just doesn’t taste right with butter cream to me.

basic cream cheese frosting uses : 1lb cream cheese 4cups confectioners sugar 1 tbsp vanilla
