Like a lot of people I have a family to feed on a budget and one of the families regular meals is what I call one pot meals or casseroles. But sometimes a little inspiration goes along way. Id got to a point I was making the same 4 or 5 casseroles and whilst they are firm family favourites we now welcome the many more that I now incorporate as a result from obtaining this book. There are 100 recipes so there is sure to be something to please even the fussiest eaters. The recipes are very easy to follow and unlike other books I’ve purchased make sense and the end result is a healthy home cooked meal. My hubbys favourite is most definitely the Mexican inspired Beefy Tortilla Casserole and when my ever fussy veggie sister comes to dinner I know I won’t get her usual sighs at my Broccoli Cheese casserole, she says it makes a great change to boring old macaroni and cheese! Great recipe book.

My cast iron cookware is just screaming to be used for these casserole dishes. I am frequently about fast, tasty, non-fussy and this cookbook has that and more. One that caught my eye as soon as I skimmed the interactive TOC was the “Shipwreck Casserole.” Hmmm: onions, butter, milk, canned corned beef, canned drained kidney beans, canned drained sliced potatoes; mix per directions, cook 45 min and serve. How easy! There is a bit of everything: breakfast, veggie casseroles, meat and poultry casseroles, and some ethnic combos that sound easy and delicious. 108 Cookbooks did it right!
