I find it much easier to cook from written recipes than videos; do you have this recipe written out somewhere? This recipe is better than the other ones I’ve found online.

They have a sharp, slightly bitter taste but don’t let that scare you. They are delicious!

TubeGuest5178 April 20, 2011 at 4:58 am

@madhunov aCCENT? WHAT accent? They sound just great! I have indian customers that come to my store that speak really fast, but I’m past the accent. I rarely hear one. Now the speed of their speech..omg I can’t keep up. But these lovely ladies sound like my aunts and cousins from Louisiana…lol

TubeGuest5178 April 20, 2011 at 5:24 am

No matter the culture, you always cook the food that takes the longest to cook FIRST…for example they put the onions, chilies and garlic in FIRST…

@AggieU : Sounds wonderful, thanks for sharing :)

1. Try using a stainless steel pan and heat it up till it passes the mercury ball water test. Quickly add the oil and ‘Sweat’ out the onions on a low flame.

2. In a separate stainless steel pan fry the potatoes in a high flame for 10-12mins with turmeric and only season with salt at the very end. Add the two together and resume your recipe. I added tomato puree to get some gravy or curry feel to it.

Think of this as the French twist on the classic Indian dish.

I’m glad I found you girls! I love Indian food, some of my Indian recipes have worked out well and others haven’t. Soaking the mehti is one tip that I needed to know! Thanks for the videos!

Really good vid.
I especially like that you have shown what the sauce looks like when it splits, and other mistakes, and also you’ve explained in detail the effects of reducing with cream

Good stuff :)

I like how you show the mistakes.

takadi April 20, 2011 at 7:45 pm

By the way, if I want to make this a sort of shellfish sauce, should I add demi glace or stock with the wine at the beginning?

takadi April 20, 2011 at 8:27 pm

haha I’ve made every single mistake done on here. The only one they missed was adding way too much vinegar

looneyirish April 20, 2011 at 9:26 pm

about time a good vid was uploaded, proper order of the cheffing world, although that butter wil go straight too my bum, being from ireland we got the best of food, ie butter and fish, mmmmmmmm salmon

Arkanix April 20, 2011 at 9:28 pm

@magalystamales I know many a chef who will tell you to splash a few drops of cream in order to bring it back. Like they did in the second part. but a few drop will fix it

magalystamales April 20, 2011 at 9:30 pm

what if it breaks? what happens next! how do you fix that huh!?

Drummerboy7stix April 20, 2011 at 9:34 pm
